1.Best way is lan using radmin or hamachi
2.other way is to create your own server it usually takes 1-2 gb of ram to maintain the server and it uses a percentage of the cpu and you also need to have good enough internet

there is 3 methods i can think of to help you with your problem
method one: upload the video with the copyright music to youtube then after it gets verified by the moderators replace the part of your speedrun with non copyright music or silence it using youtube studio
method two: turn off your radio every time you get into a car.
method three: there is a mod that turns off the radio automatically when you get into a car but i don't think that it's allowed.
